Honey is a food , which doesn`t need any digestion after harvesting it. It is so easy:

Gather, harvest, uncapping, centrifuge/ extract, strain, fill up, enjoy

 

The sources of the honey, the flower nectar and the honey dew are collected by the bees during several weeks, mixed with body-borne enzymes and put into the honeycombs for ripening and storage. During the ripening process, water is evaporated by circulation of warm air. Finally, the bees seal the cells with wax to protect the honey.

After the end of a honey flow, so-called one way escapes are placed between the breeding combs with the queen and the honeycombs above. This is a labyrinth through which the bees of the honeycomb follow the scent of the queen. Thus, the honeycombs are almost free of bees after one day and can be removed. This is a very smooth way to harvest the honey- without stress for bees and bee keeper!

 

Zuhause entfernen wir die Wachdeckel von den vollen Honigzellen, wir „entdeckeln“ die Waben traditionell mit einer vielzinkigen Gabel und schleudern sie in einer Honigschleuder aus. Der Honig fliest dabei durch die Zentrifugalkraft aus den Waben.

Dabei muss der Schleuderraum trocken sein, damit der Honig keine Feuchtigkeit aufnimmt. Läuft der Honig aus der Schleuder, wird er noch gesiebt, um lose Wachteilchen zu separieren.

Übrigens ist die „kalte Schleuderung“ seit der Erfindung der Honigschleuder eine Selbstverständlichkeit. 

Der Honig ist jetzt fertig zum Genießen!

Die Konsistenz des Honigs im Glas hängt neben der Honigsorte jetzt noch von der Kristallstruktur zum Abfüllzeitpunkt ab.
